Simple and Delicious Sourdough Pumpkin Chocolate Chip Pancakes

I am the crazy sourdough lady. It is my new official job title, and I wear it with honor. Discovering that the fermentation process involved in sourdough production allows me to eat my favorite gluten-rich foods without tummy troubles is life-changing. I am converting many of my favorite recipes into sourdough versions and having a blast doing it. Check out this recipe for pumpkin chocolate chip pancakes with a sourdough twist.
From Buttermilk to Sourdough
My original pumpkin chocolate chip pancake recipe used all-purpose flour and buttermilk as its main components. I switched things up by using a sourdough starter instead of flour and buttermilk. Because I like the taste and texture, I also use corn flour and oat flour when making sourdough pancakes. Don’t have them. Don’t want to buy them. No problem! Substitute the flour of your choice. A Note on Cooking Times
The biggest difference when making these pancakes is the absence of the traditional pancake bubbles. Everyone knows you flip a pancake when the top is full of bubbles. My sourdough pumpkin chocolate chip pancakes do not form bubbles. I do not know why, they simply don’t. Instead, I look for the edges to set. When the perimeter of the pancake looks cooked, I flip to the second side. It may take some trial and error to get the timing just right. Be patient! I promise you will figure it out. If you are new to the land of sourdough, I highly recommend the YouTube channel Farmhouse on Boone. Lisa has a laid-back approach to scratch cooking I find inspiring and encouraging. No complex sourdough rules and gate-keeping. She encourages you to keep it simple and keep trying until you figure out what works. My sourdough starter is three months old now, and I do not stress about it in the least. I thank Lisa for helping me to relax and enjoy the process.
